Breakfast of Champions
This morning my husband made breakfast. I could smell it before I got up and it brought me back to my childhood. It was SPAM. Yes, SPAM. I think that breakfasts of rice and SPAM or Vienna sausages, which really aren't sausages but I don't like to think of what it actually COULD be, are the stuff that Filipino childhoods are made of.
I would dare to say that if you did not have SPAM at least once when you were growing up, then you didn't grow up in a true Filipino household. Okay, okay I take that back - maybe you didn't have SPAM where you lived or Vienna sausages or maybe the parent that had the Flip in them didn't do the cooking.
So David made SPAM this morning and he made it like my Ma made it. It was cooked in a frying pan with butter and it was slightly brown on both sides. I like my SPAM burnt to a crispy crisp. Yes, with rice and maybe a tomato with patis.

You are bringing me back - you HAVE to have the tomato and patis! My personal favorite. My kids love it with a fried egg on the side and we LOVE spam sushi (musubi). Some traditions never die and simpley go on for generations.
We love Spam at our house too. Especially for breakfast. My hubby who is part Japanese American introduced me to musubi and it is a new favorite. I do try to buy the lower sodium version though- tastes grrrrreat!

i am however addicted to the corned beef or vienna sausage. but don't tell anybody! ;)
what is it about CANNED MEAT that is SO appealing??!!
I loved spam even before I met my filipino husband - it was meant to be! Our poor white people way of eating spam was fried like bacon, accompanied by macaroni and cheese (the kind in the box!). Now I LOVE spam, eggs and rice for breakfast, but we don't make it too often because then our whole apt smells like fried meat for a day.
I like my Spam cut and fried in a pan. Served with a ton of white STICKY rice and tomato. No patis needed (watching my salt intake). The unfortunate thing is that the Hubs (Mexican-Puerto Rican) totally dislikes Spam so I only make it when he's out of town.
I'm not sure if I even like Spam, but I have definitely grown accustomed to the taste and don't mind munching on them. True to form of a Filipino Mom, I now serve it to my kids. Easy and fast to cook....hehe
It's hard to believe that a product like spam has such worldwide appeal. I grew up in sourthern Minnesota-near Austin...the mothership...home of Hormel and Spam. We had spam when we went camping, but never at home. My wife and I were actually talking about Spam the other day. She told me she has been craving it. She also told me that there was another product made in China that people ate if they couldn't afford Spam. For the life of me, I can't recall the name of it. She said she ate a lot of the canned meat from China.
Ya know...a little fried Spam with eggs and rice does sound good. I'll skip the patis though...
Oh man...Spam over rice is up there in terms of comfort foods from my childhood (along with hotdog fried rice and scrambled eggs over rice) ie foods I could cook myself at age 8.
My favorite way to eat Spam is sliced and pan fried (is it really fried if you're not cooking with any oil, just the grease that comes off the Spam?) with sweet chili sauce and over rice. Mm...Alas, my half Japanese hubby dislikes span though his uncle makes kick ass musubi.
